Italian Vintage Chicken

  1. Preheat oven to 350 degrees F.
  2. Mix together the flour, salt, and pepper. You can add other spices if desired (some Italian seasoning and paprika is also good).
  3. Dredge chicken in flour mixture.
  4. Brown chicken in batches in skillet with 1/2 stick (4 tablespoons) of butter on medium-low heat, about 4 minutes per side.
  5. Remove browned chicken and place in glass pan.
  6. Melt remaining 1/2 stick of butter once all the chicken is browned and add green onions and mushrooms.
  7. Cook mushrooms and green onions for 15 minutes over medium-low heat.
  8. Add all the wine, water, garlic powder, and onion powder to the onions and mushrooms and cook for an additional 2-5 minutes until the wine is simmering.
  9. Pour the wine mixture over the chicken and cook uncovered at 350 F for 30 minutes.
