Italian Vintage Chicken
- 1 whole chicken cut into 8 pieces or 4 breasts cut into .5 inch strips
- 1/2 cup of flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 stick of butter
- 5 green onions
- 2 cups of sliced mushrooms
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 cup of sherry wine
- 1/2 cup marsala wine
- 1/4 cup of hot water
- Preheat oven to 350 degrees F.
- Mix together the flour, salt, and pepper. You can add other spices if desired (some Italian seasoning and paprika is also good).
- Dredge chicken in flour mixture.
- Brown chicken in batches in skillet with 1/2 stick (4 tablespoons) of butter on medium-low heat, about 4 minutes per side.
- Remove browned chicken and place in glass pan.
- Melt remaining 1/2 stick of butter once all the chicken is browned and add green onions and mushrooms.
- Cook mushrooms and green onions for 15 minutes over medium-low heat.
- Add all the wine, water, garlic powder, and onion powder to the onions and mushrooms and cook for an additional 2-5 minutes until the wine is simmering.
- Pour the wine mixture over the chicken and cook uncovered at 350 F for 30 minutes.
