Cauliflower Fritters
- 1 16 ounce bag frozen cauliflower florets
- 1 egg
- 2 Tablespoons all purpose flower
- 1 medium onion
- 1/2 pinch crushed red pepper flakes
- 1 teaspoon parsely flakes
- Salt and pepper
- oil for frying (grapeseed works great)
- 1. Add cauliflower florets to boiling, salted water. Cook for 5 minutes. Please note: I have tried to make these with fresh and frozen cauliflower. The frozen florets are FAR superior
- 2. Drain the cauliflower and and coarsely chop in food processer along with onion.
- 3. Place cauliflower and onion puree in bowl. Add egg, flower, salt, pepper, parsely, and red pepper flakes. Stir to mix all the ingredients.
- 4. Pan fry 1 Tablespoon at a time in shallow oil about 3 minutes per side on med-high heat.
- 5. Drain in power towels.
- Can be served alone or as a base for appetizers with various sauces, toppings, etc. Fun and delish! Hard to stop eating.
