Cauliflower Fritters

  1. 1. Add cauliflower florets to boiling, salted water. Cook for 5 minutes. Please note: I have tried to make these with fresh and frozen cauliflower. The frozen florets are FAR superior
  2. 2. Drain the cauliflower and and coarsely chop in food processer along with onion.
  3. 3. Place cauliflower and onion puree in bowl. Add egg, flower, salt, pepper, parsely, and red pepper flakes. Stir to mix all the ingredients.
  4. 4. Pan fry 1 Tablespoon at a time in shallow oil about 3 minutes per side on med-high heat.
  5. 5. Drain in power towels.
  6. Can be served alone or as a base for appetizers with various sauces, toppings, etc. Fun and delish! Hard to stop eating.
