Potato Salad

  1. Blanch Potatoes until just tender, strain water, and place in an ice bowl to stop the cooking. Let potatoes sit in ice bath for about 5 min. Strain any excess water, and place potatoes on a paper towel lined sheet pan, place paper towels on top of potatoes as well, you want to remove as much moisture as possible. Place in fridge until thoroughly cooled. Once the potatoes are cooled, gently fold in the remaining ingredients. Remember to gently fold the ingredients, so you don't break or mash the potatoes.
