Pear Salad With Pom Dressing

  1. Dressing:
  2. In a large mixing bowl, combine the pomegranate juice, white vinegar, lemon juice and zest, honey and dijon mustard. Slowly whisk in the oil, seasoning with salt and pepper.
  3. Salad:
  4. Score 1-2 fresh pomegranates and place in a bowl of water. Break open the pomegranates to free the arils. Sieve and put the arils in a separate bowl. Reserve 1/2 cup of arils and set aside. Toss the green salad with just enough dressing to lightly coat. Top with almonds, blue cheese and sliced pears. Garnish with fresh pomegranate arils.
