Angel Hair Pasta Clams. Tomatoes, Basil And Parsle
- 1 pound Angel Hair or Capellini pasta, uncooked
- 2 tablespoons vegetable oil
- 1 tablespoon minced garlic
- 5 cups tomatoes, diced
- 1/2 teaspoon basil
- 1/4 cup olive oil
- 4 garlic cloves, pressed
- 1/4 cup chopped Italian parsley
- 2 cans chopped or minced clams - (6 1/2 oz ea), with juice
- 1 bottle clam juice - (8 oz)
- 5 tablespoons Parmesan cheese
- Salt and freshly ground pepper, to taste
- Prepare pasta according to package directions; drain. Pour olive oil into a skillet. Lightly saute garlic. Add parsley, basil, tomatoesc and chopped or minced clams, juice from clams and bottled clam juice to skillet. Cook for 3 minutes. Add hot pasta to skillet; toss well. Toss with Parmesan cheese and serve immediately.
