Turkey Tetrazzini

  1. Cook spaghetti adding a tablespoon of oil, drain
  2. Melt 2 tablespoons butter in skillet and saute onion and mushrooms until liquid evaporates
  3. Scrape into bowl with diced turkey
  4. Melt and additional 2 tablespoons butter, add flour. Cook and stir for 2-3 minutes, do not brown.
  5. Stir in boullion cubes and 1 cup hot water and stir constantly until mixture thickens. Simmer 5 minutes. Add milk and sherry. Reduce heat and simmer 3 more minutes.
  6. Stir into turkey mixture along with green pepper.
  7. Stir in cooked spaghetti, add parmesan.
  8. Pour into casserole and top with breadcrumbs.
  9. Bake at 350 degrees for 30 minutes.
