Turkey Tetrazzini
- 8 oz. package spaghetti
- 4 tablespoons butter, divided
- 1 medium onion, chopped
- 8 oz. package sliced mushrooms
- 2 cups cooked and diced turkey (minimum)
- 2 tablespoons flour
- 2 cubes chicken boullion
- 1 cup hot water
- 1 cup evaporated milk, heated
- 1/4 cup sherry
- 1/4 cup green pepper, diced
- 1 tablespoon parmesan cheese
- 1 tablespoon breadcrumbs
- Cook spaghetti adding a tablespoon of oil, drain
- Melt 2 tablespoons butter in skillet and saute onion and mushrooms until liquid evaporates
- Scrape into bowl with diced turkey
- Melt and additional 2 tablespoons butter, add flour. Cook and stir for 2-3 minutes, do not brown.
- Stir in boullion cubes and 1 cup hot water and stir constantly until mixture thickens. Simmer 5 minutes. Add milk and sherry. Reduce heat and simmer 3 more minutes.
- Stir into turkey mixture along with green pepper.
- Stir in cooked spaghetti, add parmesan.
- Pour into casserole and top with breadcrumbs.
- Bake at 350 degrees for 30 minutes.
