Granola
- 3 C rolled oats
- 1.5 C chopped nuts almonds, pecans, and/or walnuts
- 3/4 C sunflower seeds
- 1/2 C coconut shavings (add during final 15 min of baking)
- 1/4 C honey
- 1/4 C maple syrup
- 1/4 C olive oil, 1:1 mix of EVOO & Blood Orange olive oil from Imperial Olive
- 1/2 tsp ground cinnamon
- 2T light brown sugar (packed)
- 1.5 tsp Kosher salt
- Preheat oven to 300u0b0. Mix oats nuts and seeds in large bowl. Warm the maple syrup, honey and olive oils in a small saucepan over low heat until it thins (2-3 min). Do not boil. Pour over dry ingredients and mix well until coated. Spread evenly on large rimmed baking sheet. Bake 45 min., stirring ~ every 15 mins. It will be golden brown when done. Let cool on baking sheet; it will crisp as it cools.
