Hawaiian Oatmeal Cookies
- 1 c granulated sugar
- 1 c firmly packed brown sugar
- 1 c butter (softened)
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 tsp salt
- 1 tsp baking soda
- 2 tsp baking powder
- 2 cups + 2 tbsp flour
- 2 cups rolled oats (quick or old fashioned)
- 2 cups sweetedned flaked coconut
- Preheat your oven to 375 defrees F. Cream together the butter and sugar. Blend in the eggs, vanilla and salt. In a seperate bowl stir together the baking soda, baking powder and flour. Mix into the wet ingredients until blended. Add the oats and coconut just until combined.
- Place walnut sized balls onto an ungreased cookie sheet, 2 inches apart, and flatten slightly with a fork dipped in water.
- Bake in 375 degree oven for about 11-13 minutes (until the cookies are light golden brown around the edges). Enjoy!
