Celebrity Shrooms

  1. PREPARATION:
  2. For the filling
  3. In a non stick pan put 2 tabs unsalted butter and saute half the quantity of chopped onion, garlic, Crushed Peanut, Chili, Ginger, Lemon grass 1/2 table spoon Soya, salt, pepper and seasoning (Aromate or Maggie)
  4. Remove the stalks from the mushroom and season with salt and pepper; stuff the sauteed mixture in the cap,
  5. For the Batter
  6. Beat the egg in a bowl and add the iced water.
  7. The water must be as cold as possible,
  8. As this prevents the batter from absorbing too much oil, keeping it light and crispy.
  9. Lightly mix in the flour with a fork and beat gently don't worry too much about lumps. Prepare this batter immediately before use.
  10. Dip the Mushrooms in the batter and put one by one in the hot oil
  11. Mushrooms should be cooked in oil at 180C/350F? If the coated mushroom sinks to the bottom of the oil, the temperature is too high.
  12. For The Sauce Coating
  13. In a wok add 2 table spoon oil and saute remaining chopped onion, garlic, ginger, Crushed peanut Turmeric powder chili with 2 table spoons of peanut butter and 1 tea spoon of honey Toss the Fried Stuffed mushroom till all the ingredients coats, finally add chopped spring onions. Serve in a bamboo boat and garnish as desire.
