Sweet Potato Waffles

  1. Boil sweet potatoes in a large pot of water until tender. Drain, transfer to medium bowl, mash well. Add milk, egg yolks, brown sugar, butter, and ginger. Mix thoroughly.
  2. Preheat waffle iron. Whisk flour and next 5 ingredients in a large bowl. Add potato mixture, mix well. Using electric mixer, beat egg whites in another bowl until peaks form. Add 1/3 of egg whites to batter, fold just to blend, repeat with remaining two batches of egg whites.
  3. Coat waffle iron with nonstick spray. Add batter to waffle iron and cook until waffles are lightly browned and set. Amount of batter to add and cooking time depend on the waffle iron.
