Chicken Aioli
- For the chicken:
- 4 garlic cloves, chopped
- 2 T olive oil
- 2 T soy sauce
- 1 t lemon juice
- 1 t ground ginger
- 1 t cardamom pods (about 16)
- 1 t finely grated orange zest
- 1 star anise
- 1/2 t cinnamon
- 1/2 t black pepper
- 1 pinch ground cloves
- 2 1/2 lb chicken wings (or thighs)
- For the aioli:
- 4 garlic cloves, chopped
- 1/2 t coarse sea salt
- 1 egg yolk
- 1 cup olive oil
- lemon juice to taste
- Coarsely chop chicken marinade ingredients together in pestle or blender, to rough puree. Marinate chicken in this for 6 hours or overnight in refrigerator. Broil wings (I baked chicken thighs in covered pan) and then serve with aioli.
