Apple Burritos
- 6 to 7 apples, washed, cored and sliced (not peeled)
- 1/2 c. frozen apple juice concentrate
- 3 c. pineapple juice
- 3 Tbsp. cornstarch
- 1 doz. whole wheat flour tortillas
- Cook apples in apple juice concentrate slowly until tender. Set apples aside and heat pineapple juice and thicken with cornstarch mixed with a little water to make a paste.
- Cook until clear and bubbly, stirring.
- Fold 1 cup pineapple thickened juice into cooked apples.
- Place 1/3 cup apples on center of each tortilla.
- Roll tortilla and place seam side down in a 9 x 13-inch baking pan sprayed with vegetable spray.
- Cover with remaining pineapple juice.
- Bake, covered, at 350u0b0 for about 20 minutes until heated through.
- Serve hot or cold.
- You may add raisins or nuts, if desired.
