Apple Burritos

  1. Cook apples in apple juice concentrate slowly until tender. Set apples aside and heat pineapple juice and thicken with cornstarch mixed with a little water to make a paste.
  2. Cook until clear and bubbly, stirring.
  3. Fold 1 cup pineapple thickened juice into cooked apples.
  4. Place 1/3 cup apples on center of each tortilla.
  5. Roll tortilla and place seam side down in a 9 x 13-inch baking pan sprayed with vegetable spray.
  6. Cover with remaining pineapple juice.
  7. Bake, covered, at 350u0b0 for about 20 minutes until heated through.
  8. Serve hot or cold.
  9. You may add raisins or nuts, if desired.
