Chicken Taquitos With Pico De Gallo

  1. 1. Preheat oven to 400F and coat a baking pan with cooking spray.
  2. 2. Dice chicken small.
  3. 3. Heat chicken over low heat, mixed with taco seasoning and a bit of water. Simmer for a few minutes to marinate.
  4. 3. Lay out 4 tortillas and add a thin line of chicken, tomato, scallions and cheese. Roll up tight and place in baking pan, seam-side down. (Width of each Taquito should be about the size of a "D" battery).
  5. 4. Bake for 15 minutes.
  6. 5. Serve with Pico de Gallo.
