Chicken Taquitos With Pico De Gallo
- For Taquitos:
- 1 cup cooked chicken breast
- taco seasoning (packaged or home-made)
- 4 small, soft tortillas
- 1 plum tomato, diced
- 1 scallion, diced
- shredded mexican cheese, store-bought
- For Pico de Gallo:
- 2 plum tomatoes, small-diced
- 1/2 small onion, small-diced
- 1/8 cup cilantro, minced
- 1. Preheat oven to 400F and coat a baking pan with cooking spray.
- 2. Dice chicken small.
- 3. Heat chicken over low heat, mixed with taco seasoning and a bit of water. Simmer for a few minutes to marinate.
- 3. Lay out 4 tortillas and add a thin line of chicken, tomato, scallions and cheese. Roll up tight and place in baking pan, seam-side down. (Width of each Taquito should be about the size of a "D" battery).
- 4. Bake for 15 minutes.
- 5. Serve with Pico de Gallo.
