Butter Beer Chili
- 4t. olive oil divided
- 2 lbs ground turkey
- 2 med. onions, diced
- 1 small butternut squash 1/2" dice
- 2 cans light beer
- 2 cans black beans
- 2 cans diced tomatoes
- 1 t. smoked paprika
- 1T oriental chili powder
- 1T chili powder
- Grated cheddar cheese for serving
- Sliced green onion tops and whites for serving
- Heat 2 t. olive oil in large pot
- Brown turkey over medium heat and remove from pot.
- Add remaining oil to pot and heat over medium heat. When oil is hot add onions and squash. Saute until onions are soft (5 - 7 min.). Add beer and bring to a boil, reduce heat and simmer 5 minutes. Add paprika and chili. (I like my chili hot, feel free to reduce the amounts of chili powder) Add remaining ingredients and turkey back to pot. Add water until all ingredients covered. Bring to a boil, reduce heat and simmer 30 minutes, until squash is tender. Serve with grated cheese, and sliced green onions (tops and whites)
- I made 1/2 of this recipe when I made it and was perfect for two and a bowl left for lunch.
