Iced Pumpkin Cookies
- 1 cup butter room temp
- 1 cup sugar
- 1 cup pumpkin puree
- 1 egg
- 2 cups sifted flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- Frosting:
- 3 tbs butter
- 3 tbs milk
- 1/2 cup light brown sugar
- 1 cup powdered sugar
- 1 tsp vanilla extract
- For cookies:
- cream together butter and sugar. Add pumpkin puree and egg,mix well. Add flour,baking soda,cinnamon and salt. Mix until combined. Drop from spoon into dollops on greased or non stick cookie sheet 2 inches apart.
- Bake at preheated 375 degree oven 10-12 minutes. Remove from oven set aside.
- For frosting:
- Melt butter over low heat and add milk and brown sugar and vanilla Stir until sugar melts. Remove from heat. Add powdered sugar, stir until
- creamy.
- Frost the cookies while they are still warm by spooning the frosting over top.
