Earthy Macaroni & Cheese
- 1 lb. whole wheat macaroni
- 1 lb sweet italian sausage
- For Cheese Sauce
- 3 tablespoons butter
- 3 tablespoons flour
- 2 teaspoons season all
- 2 3/4 cups milk
- 3/4 cup cream
- 1 cup smoked gouda
- 1 cup mozzarella
- 1 cup asiago cheese
- 1/2 grated parmesan
- 1/2 chihuahua cheese
- 3 tablespoons sour cream
- 2 oz. cream cheese
- 2 tablespoons dijon mustard
- Add macaroni to boiling water and cook 10 minutes. Drain and set aside.
- Remove sweet sausage from the casing and cook it over medium heat, breaking it up with the spatula for four minutes. Put in a bowl and set aside.
- In a large (5qt) saucepan, melt butter over medium heat. Stir in flour and seasoning and cook for 3 minutes. Whisk in milk and bring to a boil while whisking constantly. Turn heat down to medium and cook three minutes whisking occasionally. Whisk in heavy cream. Whisk in sour cream and cream cheese. Whisk in dijon mustard. Add in all cheese and stir until melted. Take off heat and set aside.
- In a large shallow glass dish put macaroni and crumbled sausage. Pour cheese sauce over the top. Bake in oven at 400 for 20 to 25 minutes.
