Walnut Pita Bars

  1. Mix butter, flour, sugar and lemon rind as for pie crust. Beat egg and milk together and add to flour mixture. Stir with a fork, then mix with your hands till dough leaves the side of the bowl. Divide dough in half. Chill 1/2 hour.
  2. Make filling:
  3. Cream egg yolks and sugar till light and fluffy. Add vanilla.
  4. Beat 9 eggs white till stiff peaks form. Fold into yolk mixture till blended. Fold in walnuts. Set aside.
  5. Roll 1/2 dough to fit a 9x13" pan, allowing the dough to line the sides of the pan. Fill crust with walnut filling. Roll other half of dough between two sheets of waxed paper to fit the size of the pan. Remove one sheet of paper and gently place the top over the filling. Slowly remove paper. Seal edges with a fork.
  6. Bake at 350 degrees for 1 hour.
