Chicken And Cheese

  1. Cut the chicken breasts into bite-sized pieces and place into beaten egg. Mix well to cover chicken completely.
  2. Let sit for at least 2 hours.
  3. Remove chicken from egg and coat generously with bread crumbs.
  4. Fry chicken a little at a time in a large skillet with a mixture of half butter and half oil.
  5. Remove from pan and put all the chicken in a bowl.
  6. Saute the onion and mushrooms slightly.
  7. In a 13 x 9 baking dish, layer 1/2 of the chicken and mushroom mixture. Sprinkle with some salt and pepper. Repeat with the rest of the chicken and mushrooms and salt and pepper.
  8. Sprinkle the top with the cheese and pour the chicken broth over the whole thing.
  9. Cover with foil and bake for 1 hour at 350 degrees until chicken is golden and cheese is melted and bubbling.
  10. Serve over rice or rice pilaf.
  11. Can be done ahead and chilled or frozen.
