Chicken And Cheese
- 2 lbs boneless chicken breasts
- 2 eggs - beaten
- 2 cups flavored bread crumbs
- 1/4 cup onion - chopped
- 12 oz mushrooms - sliced
- 8 oz muenster cheese - grated
- 2 cups chicken broth
- dash of salt and pepper
- oil and butter for frying
- Cut the chicken breasts into bite-sized pieces and place into beaten egg. Mix well to cover chicken completely.
- Let sit for at least 2 hours.
- Remove chicken from egg and coat generously with bread crumbs.
- Fry chicken a little at a time in a large skillet with a mixture of half butter and half oil.
- Remove from pan and put all the chicken in a bowl.
- Saute the onion and mushrooms slightly.
- In a 13 x 9 baking dish, layer 1/2 of the chicken and mushroom mixture. Sprinkle with some salt and pepper. Repeat with the rest of the chicken and mushrooms and salt and pepper.
- Sprinkle the top with the cheese and pour the chicken broth over the whole thing.
- Cover with foil and bake for 1 hour at 350 degrees until chicken is golden and cheese is melted and bubbling.
- Serve over rice or rice pilaf.
- Can be done ahead and chilled or frozen.
