Chocolate Zucchini Bread

  1. Preheat 350. In large bowl combine eggs, sugar, oil and vanilla. Melt 2 TB butter and 6 TB cocoa pdr and blend until smooth. Set aside to cool. Add zucchini and cooled cocoa mixture to the large mixing bowl and blend well. In separate bowl, mix together the dry ingredients. Add dry ingredients to the batter(except for the 2 tsp flour). Stir only to blend. In another bowl mix choc chips and 2 tsp flour (this keeps them from sinking to bottom of pan. Add flour coated chips to batter. Spoon batter into 2 generously greased and floured loaf pans. Bake for 60-70 minutes. Cool in pan for 5-10 minutes. Remove from pan and continue to cool on a wire rack .
