Sweet-Hot Chile Noodle Bowl With Fresh Citrus
- 12 oz. dried Chinese wegg noodles or thin spaghetti pasta.
- 1/2 cup light vegetable oil
- 3 medium cloves garlic, finely minced
- 1 tablespoon finely minced fresh ginger
- 1 thn-skinned orange, juice and zest finely grated
- 1 teaspoon frozen orange juice concentrate
- 1/4 cup low-sodium soy sauce
- 1/3 cup sweet-hot chile sauce such as Mae Ploy or Nuoc Cham Ga
- Thinly sliced whole scallions for garnish
- Bring 8 cups of water to a boil. Add noodles and cook 7 to 10 minutes or until firm but tender and chewy. Drain in a colander but do not rinse. Tip the noodles into a large bowl and setr aside.
- In a small bowl, whisk together the oil, garlic, ginger, orange juice, orange zest, orange juice concentrate, soy sauce, and chile sauce. Pour over the noodles, toss well, and set aside for 10 minutes to allow flavors to marry before serving.
