Salt And Chilli Chicken & Fried Rice
- 2 Chicken Breasts
- 500 Ml of Milk
- 1 Cup of corn flour
- 1/3 Cup of plain flour
- 1 TSP of garlic powder
- 1 TSP Salt
- 1 TSP Cayenne Pepper
- Sea Salt
- 5 Spring Onions
- 2 Onions
- 1 Red Chilli
- Cut the chicken into strips and soak in milk for 30 minutes
- Heat oil in a deep fat frier.
- Mix 3 parts corn flour with 1 part plain flour and 1/2 tea spoon of garlic powder, season with salt and pepper.
- Take the chicken out of the milk and coat with flour mix.
- Fry the chicken in the oil for about 7-10 minutes.
- Chop onions, scallions and 1 red chilli (remove seeds if you want it milder)
- Heat oil in a wok until smoking, add the chopped onions and fry for about 4 minute, then add the scallions and chillies.
- Remove the chicken from the oil and dab on kitchen towel to remove grease.
- Put chicken into a large serving bowl and shake over sea salt and cayenne pepper (Taste to get correct flavour of salt and spice)
- Then pour the vegetables over the chicken.
- For the rice, cook rice in rice cooker, In a wok heat oil until smoking. Add an egg and quickly scramble (will cook in seconds) add the rice and a table spoon of soya sauce and fry for about 5 - 10 minutes.
