Salt And Chilli Chicken & Fried Rice

  1. Cut the chicken into strips and soak in milk for 30 minutes
  2. Heat oil in a deep fat frier.
  3. Mix 3 parts corn flour with 1 part plain flour and 1/2 tea spoon of garlic powder, season with salt and pepper.
  4. Take the chicken out of the milk and coat with flour mix.
  5. Fry the chicken in the oil for about 7-10 minutes.
  6. Chop onions, scallions and 1 red chilli (remove seeds if you want it milder)
  7. Heat oil in a wok until smoking, add the chopped onions and fry for about 4 minute, then add the scallions and chillies.
  8. Remove the chicken from the oil and dab on kitchen towel to remove grease.
  9. Put chicken into a large serving bowl and shake over sea salt and cayenne pepper (Taste to get correct flavour of salt and spice)
  10. Then pour the vegetables over the chicken.
  11. For the rice, cook rice in rice cooker, In a wok heat oil until smoking. Add an egg and quickly scramble (will cook in seconds) add the rice and a table spoon of soya sauce and fry for about 5 - 10 minutes.
