Ralph'S Shrimp Salad
- 24 uncooked shrimp, peeled and deveined
- 1 bag of dole coleslaw
- 1 bag of dole salad
- 1 jar of marzetti poppyseed dressing
- 1 vidala onion
- 1 red pepper
- 1 bag of marzetti croutons
- 1 tablespoon of olive oil
- 1 tablespoon of butter
- 4 chilled salad plates
- slice red peppers in strips chop vidala onion
- Preheat a medium skillet over medium-high heat. Add oil when hot saute peppers and onions until soft yet crunchy about 5 minutes. Set aside, preheat a medium skillet over medium-high heat add butter when melted add shrimp to skillet until pink.
- Set aside. Place lettuce on chilled salad plates.
- Then top with a handful of coleslaw. Top with warm red peppers and onions, then shrimp. Add a few croutons on each salad and top with poppyseed dressing. And Enjoy
