Strawberry Satin
- 1/2 cup butter, melted
- 1/4 cup brown sugar, packed
- 1 cup flour
- 1/2 cup chopped pecans
- 1 (10 oz) pkg frozen strawberries
- 1 cup sugar
- 2 egg whites
- 1 tsp vanilla
- 1 T lemon juice
- 1/2 pint whipping cream
- In a 9 x 13-inch pan add melted butter, brown sugar, flour, and chopped pecans. Bake at 400 for 15 minutes, stirring occasionally until golden brown. Cool and press half the mixture in the same 9 x 13 pan. Reserve last half of mixture for topping.
- For the filling ombine the strawberries, sugar, egg whites, vanilla and lemon juice in a large mixing bowl and beat for 10 minutes at high speed. Then fold in whipping cream (whipped).
- Pour mixture into the 9 x 13 pan and top with remaining pecan-flour crumbs. Freeze overnight.
