Phills' Chili

  1. In a large dutch oven, saute onions until golden, add garlic. Brown the beef cubes in a separate pan the add to the onion mixture. Stir in chilies with the juice, consomme, tomato product, and chili powder. Simmer until the meat is tender, this could take a few hours depending on the cut of meat used. Add more consomme or water (or beer) if needed. When the meat is tender add the beans, partially drained (depending on the viscosity of the stew.) Heat through and serve w/ traditional garnish.
  2. you may add smoked pasilla peppers, smoked paprika, Worcester sauce, barbecue sauce, dark beer with the consomme or all of the above
  3. serves 4
