Sister'S Simple & Delicious Oatmeal Cake

  1. Lightly grease and flour a 9 x 13 inch cake pan and preheat oven to 350 degrees F. Pour the boiling water over the butter and oats. Don't stir. Cover and let stand 20 minutes. While this is standing, place the remaining cake ingredients in a large mixing bowl. Again, do not stir. Add the oat mixture and stir only until all ingredients are wet.
  2. Pour into prepared pan and bake at 350 degrees for 35-40 minutes. Cake will leave the edges of the pan when done.
  3. FROSTING:
  4. While the oats are standing, combine the frosting ingredients in a heat-proof bowl. Set the bowl by the oven vent. When the cake is almost done, stir the ingredients together. The butter should be nice and soft, but if it isn't, place in the microwave a few seconds. Remove cake from oven and turn oven to broil. Pour the frosting over the cake and place in the center of the oven. Broil for two minutes, leaving oven door slightly ajar. Watch carefully so the frosting does not burn. Remove and let cool in pan on a cooling rack.
