Cheese Grits Casserole
- Ingredients:
- 1 pound sharp cheddar cheese, grated (I used one cup of parmesean and three cups cheddar cheese)
- 1/2 cup butter (1 stick)
- 1/2 teaspoon ground mace (I didn't have mace, so I used nutmeg instead0
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 2 to 3 garlic cloves, finely chopped
- 1 cup hot grits, cooked in buttermilk (instead of water) according to package directions
- 6 eggs
- Cheese Grits Casserole
- Makes: 10 to 12 servings
- Directions:
- Preheat oven to 350 degrees F. Butter a 2-quart casserole or 8 1/2" x 11" baking dish. Stir the cheese, butter, mace, salt, cayenne pepper, garlic and jalapeno peppers into the hot grits. Beat the eggs well; then beat them into the grits mixture. Pour into the prepared dish and bake until set and lightly browned, 30 to 45 minutes.
