Pumpkin Roll
- Cake
- 3/4 cup flour
- 1/2 t baking powder
- 1/2 t baking soda
- 1/2 t ground cinnamon
- 1/2 t cloves
- 1/4 t salt
- 3 eggs
- 1 cup sugar
- 2/3 cup pumpkin
- 1 cup nuts (chopped) - can be spread on top or mixed in
- Filling
- 8 oz cream cheese
- 1 cup powdered sugar
- 6 T margarine (soft)
- 1 t vanilla
- Oven 350F
- 1. Grease and flour a 15x10 pan
- 2. Pour cake mix in pan and bake about 10-15 minutes (watch for it)
- 3. Lay cake out on terrycloth dish towel sprinkled with powdered sugar and let it cool
- 4. Roll cake into towel
- 5. Unroll cake
- 6. Spread filling
- 7. Roll cake and wrap tight in clear plastic wrap
- 8. Chill overnight
