Green Bean Bacon Salad
- 2-pounds Fresh french green beans - trimmed
- 1/2 pound - cooked bacon and crumbled
- 1 - cup - chopped walnuts
- 1/4 cup - green onions chopped
- 1/2 - cup cilantro - chopped
- 4 - tablespoons - dijon mustard
- 2 Tablespoons- hot water
- 1 - teaspoon sugar
- 3 - tablespoons - honey
- 2 - whole lemon - juiced
- 1/2 - teaspoon salt
- 1 - teaspoon black pepper
- 2/3 cup - olive oil
- Preheat oven 350. Toast walnuts on a sheet pan for 10 minutes in oven. Remove and cool.
- Fill large pot of water on high heat and bring to a boil. Drop in green beans and cook for 10 minutes. Fill a large bowl with ice water. Drain beans and drop in ice water to stop cooking process. Drain beans on paper towels.
- In a jar with a lid, add mustard, honey, chopped cilantro, hot water, lemon juice, sugar, salt, black pepper
- and olive oil. Shake well until dressing is emulsified Set aside. On a large platter lay beans on the platter, add half the dressing and mix into the beans. Dress with walnuts and bacon. Pour the rest of dressing over salad.
