Healthy Viva Zapata Squares

  1. Add cornmeal to boiling water, mixing vigorously until well blended.
  2. Cover and simmer about 10 minutes until done.
  3. Grease an 8 x 10-inch pan lightly with margarine and spread the cooked cornmeal flat on bottom of pan.
  4. Saute the onions and green pepper until tender in margarine.
  5. Combine with 1/4 cup salsa and refried beans; spread on top of the layered cornmeal.
  6. Spread 1/2 cup medium hot salsa over bean layer.
  7. Sprinkle shredded Cheddar cheese.
  8. Bake 20 minutes at 350u0b0.
  9. Let sit about 10 minutes before serving.
  10. Cut in serving squares.
