Turkey And Caramelized Onion Meat Loaf With Pom Sauce

  1. Caramelized Onions:
  2. 1. Heat butter and vegetable oil over high heat until foamy and hot.
  3. 2. Add onions and stir to coat. Lower heat and cook; stir until onions are browned and soft, about 40 minutes. Add brown sugar and cook until brown and caramel colored, about 5 minutes.
  4. 3. Add salt and pepper to taste.
  5. Turkey Meat Loaf
  6. 1. Prepare fresh pomegranate juice.*
  7. 2. Preheat oven to 350u0b0F.
  8. 3. In a bowl mix turkey, breadcrumbs, pomegranate juice, caramelized onions with all the pan juices, minced garlic, sage, eggs, Parmesan cheese, soy sauce and Worcestershire sauce.
  9. 4. Mix well using hands and form into a 9 x 5 loaf.
  10. 5. Place in a prepared loaf pan.
  11. 6. Bake in a preheated oven for about 1 1/2 hours.
  12. 7. Serve with 1 tablespoon of pomegranate sauce.
  13. POM Sauce:
  14. 1. Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1/2 cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.)
  15. 2. Mix ingredients together and heat to dissolve sugar. Serve on cooked turkey meat loaf.
  16. * For 1 cup of juice, cut 2-3 large POM Wonderful Pomegranates in half and juice them with a citrus reamer or juicer. Pour the mixture through a cheesecloth-lined strainer or sieve. Set the juice aside.
