Thai Cabbage Salad
- FOR SALAD:
- 1/2 head each Green & Red cabbage ~ thinly sliced
- 3 Carrots ~ grated
- 1 Red Bell Pepper ~ diced
- 1 Japanese Cucumber ~ diced
- 1 bunch of Green onions ~ chopped white & green parts
- 1 bunch of Cilantro ~ chopped
- FOR DRESSING:
- 5-7 cloves garlic ~ chopped finely
- 3 Serrano chili's ~ chopped finely
- 1/2 cup vegetable oil
- 1/2 cup White Vinegar
- 1/4 cup Low Sodium Soy Sauce
- 2 Tbls. of Sesame Oil
- 1 Tbls. Chili garlic paste
- 2 Tbls. Sugar in the Raw
- 1 cup of Peanuts ~ chopped
- *** If adding seared Ahi or grilled chicken. Coat in blackening spice before searing or grilling.
- Chop and dice all ingredients for salad. Toss together in large bowl.
- To make dressing, whisk in a bowl or small food processor also can use blending stick. I prefer a whisk.
- Toss to together before serving and sprinkle chopped peanuts on top. Add Ahi or chicken for a main meal.

- ** Note: If making ahead of time DO NOT toss in the dressing until ready to serve, can get soggy otherwise.
