Pizza Puff
- 1 lb. ground beef
- 2 to 3 Tbsp. oil
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 clove garlic, minced or pressed
- 1 jar (15 oz.) spaghetti sauce
- 3/4 tsp. Italian seasoning or 1/4 tsp. each basil, oregano and thyme
- 1/4 tsp. each basil, oregano and thyme
- 2 c. shredded Cheddar, Monterey Jack or Mozzarella cheese
- 2 eggs
- 1 c. milk
- 1 c. flour
- 1/2 tsp. salt
- 3 tsp. grated Parmesan cheese
- In skillet cook meat on medium-high heat until browned, adding oil as needed.
- Drain off all but 2 teaspoons fat.
- Add vegetables, saute until limp.
- Add sauce and seasonings.
- Simmer uncovered for 5 minutes.
- Spread meat mix in bottom of 9 x 13-inch baking dish/pan.
- Sprinkle cheese evenly over meat.
- In blender add eggs, milk, flour, 1 tablespoon oil and salt.
- Blend, pour over cheese. Sprinkle with Parmesan.
- Bake in preheated oven at 400u0b0 until browned and puffy, about 30 minutes.
