Grandma Ceccacci'S Ravioli Filling

  1. If using bread, grind the bread with the parmesan.
  2. Cook the meat, onion, and garlic in a large skillet until crumbly and evenly browned. Drain. Stir in the spinach and cook until wilted, about 1 to 2 minutes. Remove from heat and allow to cool 10 minutes.
  3. Transfer to a large bowl. Stir in the parsley, salt, pepper, cheese and bread crumbs. Add the eggs and mix well. Run the filling through a grinder or food processor until smooth.
  4. Fill ravioli while still warm.
