Grandma Ceccacci'S Ravioli Filling
- 1 lb ground beef (or ground beef & ground pork)
- 1/2 medium onion
- 2 cloves garlic, minced
- 1 1/2 c fresh spinach
- 1 1/4 T dried parsley
- 1/4 t salt
- 1 pinch black pepper
- 5 T grated parmesan cheese
- 1 slice bread OR 1/4 c bread crumbs
- 2 eggs, well beaten
- If using bread, grind the bread with the parmesan.
- Cook the meat, onion, and garlic in a large skillet until crumbly and evenly browned. Drain. Stir in the spinach and cook until wilted, about 1 to 2 minutes. Remove from heat and allow to cool 10 minutes.
- Transfer to a large bowl. Stir in the parsley, salt, pepper, cheese and bread crumbs. Add the eggs and mix well. Run the filling through a grinder or food processor until smooth.
- Fill ravioli while still warm.
