Microwave Banana Pudding

  1. Melt butter at 100% power.
  2. Blend together the sugar, cornstarch and salt and stir into melted butter.
  3. Gradually stir in milk.
  4. Cook at 100% power for 3 minutes.
  5. While cream mixture is cooking, beat egg yolks by hand.
  6. Stir a little hot cream mixture into beaten yolks, then pour the yolk mixture into cream, stirring well while doing so.
  7. Cook at 100% power 4 minutes more or until desired thickness is reached.
  8. Be sure to stir mixture 1 to 2 times while cooking.
  9. Add vanilla.
  10. Line a 1 1/2-quart casserole dish with vanilla wafers.
  11. Top with 2 sliced bananas.
  12. Pour half the custard over the bananas.
  13. Repeat the layers.
  14. Top with whipped topping or meringue.
