The Solo Job

  1. 0) The Solo Job is cooked using a small frying pan (8-9" in diameter), a toaster, and a cutting board (that's all!).
  2. 1) Cut the bacon strips in half so that they fit in the pan and cook over medium-high heat.
  3. 2) While the bacon cooks, slice the onion widthwise (so you have rings) slightly off center. Cut a ring from the onion ~1/4 inch thick from the center. Remove the two outer rings and dice the remaining onion slice.
  4. 3) Once the bacon is finished, remove and place on a paper towel (in a warming tray if you want). Add the onion rings, diced onion, and sliced mushrooms to the pan. Lower heat to medium.
  5. 4) Once the onion is browned, move the rings to one side of the pan and slide the sliced onions/mushrooms to the other. Crack one egg into each of the onion rings. The rings will maintain most of the egg and make them easy to flip later on. Pile the sliced onions/mushrooms over the eggs.
  6. 5) Put the bread in the toaster while the eggs cook. Once the eggs are cooked to your liking (I prefer mine very runny), flip the eggs and place the bacon on top (~20 more seconds)
  7. 6) Remove the toasted bread and sprinkle shredded cheese over it. Slide the eggs from the pan over the bread. The bacon should remain on top and the cheese will melt under the heat of the eggs.
  8. 7) (Optional) Dice up half an avocado and layer over the top of the sandwich. Add your favorite flavor sauce (Cholula or Frank's Red Hot are mine) and enjoy!
