Green Bean & Tomato Pasta Salad
- 8 oz rotini pasta
- 1/2 lb fresh green beans, trimmed and cut into 1 1/2 inch pieces
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped red onion
- 1/2 cup vinaigrette
- Basil-Honey-Garlic Vinaigrette:
- 1 garlic clove
- 1/2 tsp salt
- 1/2 cup EVOO
- 1/3 cup balsamic vinegar
- 2 Tb basil
- 2 Tb honey
- 1/2 tsp pepper
- Bring salted water to a boil over med-high heat and add pasta. Cook 5 min. Add green beans and cook 5 more min or until pasta is tender but firm and beans are tender. Drain and rinse with cold water.
- Meanwhile, smash garlic and salt together with the flat side of a knife to make a paste. Whisk together garlic paste, oil, and remaining ingredients until blended.
- To pasta, add tomatoes, vinaigrette, and onion, tossing to coat. Serve immediately, or cover and chill.
