Granola
- 4 cups oats -quick cooking
- 1 cup wheat germ
- 1 cup sunflower seeds or almonds
- 1/2 cup sesame seeds
- 1 cup walnuts, or 1/2 cup walnuts, 1/2 cup cashews
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon (optional)
- 1/2 cup corn oil
- 1/2 cup liquid honey
- 1 teaspoon vanilla or other liquor
- 2 cups candied pineapple or other dried fruit.
- 1. Put oven rack in middle position. Preheat your oven to 350oF. Line a large shallow pan with parchment paper.
- 2. Toss together the oats, wheat gem, seeds, nuts and salt in a large bowl.
- 3. Whisk together the oil and honey and vanilla. Then stir into the oat mixture until well coated.
- 4. Spread mixture in the baking pan and bake, stirring occasionally for 20 to 30 minutes.
- 5. Remove from oven and add dried fruit and mix everything together, then cool completely in pan on a rack.
