Spanakopitas
- 3/4 cup butter, divided
- 1 cup onion chopped
- 1 1/2 lbs. ground beef/chuck
- 10 oz. frozen chopped spinach, thawed and drained well
- 1/3 cup chopped parsley
- 16 sheets filo dough ( frozen food section), thawed
- 1/3 cup chopped fresh dill or 1 tsp. dried dill
- 1/2 tsp. pepper
- 1/2 tsp. grated fresh lemon peel
- 1/4 tsp. salt
- 1/2 lb. feta cheese
- 2 eggs
- In skillet, melt 2tbs. butter.Add onion, saute until translucent, add ground beef, cook. Drain. Add spinach, parsley,dill, pepper, lemon peel, salt. Simmer 3 min. or so. Remove from heat. Add feta cheese and eggs, mix well.
- Melt remaining butter. Brush one sheet of filo dough with melted butter. Place sheet of filo dough in baking dish. Allow edges to hang over sides. Stack 7 more sheets on top, individually, brushing each sheet with butter, placing one on top of another. Trim or fold sheets to fit pan.
- Spoon beef mixture in pan. Cover with the rest of filo dough, layering and buttering as before.
- With spoon, tuck excess filo dough that hangs over under the outer edges of pan. Brush the top sheet with butter.
- Score top of filo dough diagonally with knife.
- Bake at 375 for 40-50 min., until golden,
- When done, slice like lasagna, horiz. and vertically to make square serving pieces.
