Lemonade Cake
- Cake:
- 1 package yellow or lemon cake mix
- 1 cup sour cream
- 1 (6 ounce) can frozen lemonade concentrate, thawed
- 3tablespoons cream cheese
- 3 eggs
- Glaze:
- 1/2 cup powdered lemonade mix
- 1/2 cup water
- 2 cups confectioners sugar
- 2 tablespoons butter, melted
- Instructions for the cake: Preheat oven to 325 degrees.
- Grease and flour a 9x13 inch pan. Combine the cake mix, sour cream, frozen lemonade concentrate, cream cheese and eggs. Mix at low speed until moist. Then at medium speed for 2 minutes.
- Pour batter into the prepared pan and bake for 30-35 minutes or until cake tests done.
- Cool for 5 minutes.
- Instructions for the glaze: Combine the lemonade mix, water and confectioners sugar.
- Add the melted butter slowly and blend well.
- Prick the cake with a fork. Pour glaze over the still warm cake.
