Chunky Summer Gazpacho
- 1 large sweet onion, chopped (like Vidalia)
- 2-3 garlic cloves, minced (or 2 teaspoons of garlic powder)
- 1 English seedless cucumber, chopped
- 4-5 scallions, sliced white and some green part
- 1-2 jalapeno peppers, minced
- 2 orange or yellow bell peppers, chopped
- 1 bunch of celery hearts, chopped
- 4-5 tomatoes, chopped (if using Roma tomatoes, add a couple more)
- 1 1/2 cups frozen corn, thawed under hot running water
- 1 can Campbell's Cream of Tomato soup
- 2 large cans of Tomato Juice (preferably "not from concentrate")
- 2 cans chopped green chilies
- 3 TBS of Italian vinaigrette salad dressing
- 2 TBS Worcestershire sauce
- 2 TBS fresh lemon juice OR 1 TBS red wine vinegar
- 1 TBS celery seed
- 4-5 dashes Tabasco
- Salt and fresh ground pepper to taste
- 1 bunch fresh basil, chopped
- Combine all ingredients in a large bowl. If making ahead, add the basil just before serving.
