Angmoh Joe'S Jambalaya
- 1 pound boneless skinless chicken, or turkey, (Whatever is left over), breasts
- 1/2 pound sausage, diced, (Pork or Beef)
- diced tomatoes
- green bell pepper, seeded and chopped
- 1 hot pepper chopped
- stalk celery, chopped
- medium onion, chopped
- 3 cup chicken stock
- 2 tablespoons chopped garlic
- 1/4 teaspoon cayenne pepper
- 2 teaspoons oregano
- 2 teaspoons Cajun seasoning
- salt and ground black pepper to taste
- 2 bay leaves
- 1/2 teaspoon onion powder
- 1/2 teaspoon thyme
- 1 pound peeled and cooked shrimp
- 2 cups cooked rice
- In a Pan add a small amount of olive oil and brown the chicken, once the chicken is starting to brown add the sausage, and shrimp and mix for approx 5 min. Add 1/2 cup of stock and let simmer.
- Place the other 2 1/2 cup stock in slow cooker and add tomatoes, onion, green pepper, celery.
- Once it is hot add the meat and rest of the stock from the pan. Stir in oregano, Cajun seasoning,bay leaves, and thyme, and chopped hot pepper.
- Cover, and cook on Auto for 4 to 5 hours. Discard bay leaves and spoon mixture over cooked rice.
