Angmoh Joe'S Jambalaya

  1. In a Pan add a small amount of olive oil and brown the chicken, once the chicken is starting to brown add the sausage, and shrimp and mix for approx 5 min. Add 1/2 cup of stock and let simmer.
  2. Place the other 2 1/2 cup stock in slow cooker and add tomatoes, onion, green pepper, celery.
  3. Once it is hot add the meat and rest of the stock from the pan. Stir in oregano, Cajun seasoning,bay leaves, and thyme, and chopped hot pepper.
  4. Cover, and cook on Auto for 4 to 5 hours. Discard bay leaves and spoon mixture over cooked rice.
