Quesadilla Sandwich: Monteray Jack, Mushrooms, Peppers, Tomato, And Avocado
- Jack Cheese
- 4 Flour Taco Sized Tortillas
- Package of Baby Bella Mushrooms
- Half a Red or Yellow Pepper
- Half a Red or Yellow Tomato
- 1 Avocado
- tsp of Serano Pepper
- Olive Oil, Salt Pepper to Taste
- 1 Electric Griddle or a large frying pan
- 1. Grate enough cheese to cover 2 tortillas
- 2. Heat griddle to 350
- 3. Cut up mushrooms, peppers and tomatoes and serano peppers and keep separated
- 4. Toss mushrooms in olive oil, salt and pepper to taste. Throw on the griddle and cook for 3-4 mintues
- 5. Toss peppers in olive oil, salt and pepper and mix in with the mushrooms for another 2-3 minutes
- 6. Toss tomatoes in olive oil, salt, pepper and mix in with peppers and mushrooms. Cook until mushrooms look nicely sauteed. Then place in a bowl and set aside
- 7. Do not clean griddle and place 2 tortillas on the electric griddle. Cover them with cheese and a little of the serano peppers for spice. Place the other 2 tortillas on top making a quesadilla.
- 8. Flip after 3-4 minutes or when cheese begins to melt.
- 9. Cut up avocado and distribute over tortillas
- 10. After cheese is totally melted place onto a plate and put the sauteed veggies ontop of the quesadilla.
- 11. Wrap up like a taco and enjoy!
