Quesadilla Sandwich: Monteray Jack, Mushrooms, Peppers, Tomato, And Avocado

  1. 1. Grate enough cheese to cover 2 tortillas
  2. 2. Heat griddle to 350
  3. 3. Cut up mushrooms, peppers and tomatoes and serano peppers and keep separated
  4. 4. Toss mushrooms in olive oil, salt and pepper to taste. Throw on the griddle and cook for 3-4 mintues
  5. 5. Toss peppers in olive oil, salt and pepper and mix in with the mushrooms for another 2-3 minutes
  6. 6. Toss tomatoes in olive oil, salt, pepper and mix in with peppers and mushrooms. Cook until mushrooms look nicely sauteed. Then place in a bowl and set aside
  7. 7. Do not clean griddle and place 2 tortillas on the electric griddle. Cover them with cheese and a little of the serano peppers for spice. Place the other 2 tortillas on top making a quesadilla.
  8. 8. Flip after 3-4 minutes or when cheese begins to melt.
  9. 9. Cut up avocado and distribute over tortillas
  10. 10. After cheese is totally melted place onto a plate and put the sauteed veggies ontop of the quesadilla.
  11. 11. Wrap up like a taco and enjoy!
