Gorgonzola Fruit Delight
- For the Salad:
- 4 ripe pear, firm apples, or ripe mangos peeled and chopped
- 1/2 cup chopped vidalia or other sweet onion
- 1 cup crumbled gorgonzola cheese
- 1/2 cup chopped walnuts
- 1 cup fresh blueberries(optional)
- 4 cups mixed lettuce greens
- Dressing:
- 1 cup olive oil
- 1/4 cup maple syrup
- 2 Tablespoons Balsamic vinegar
- 2 Tablespoons Cider vinegar
- 1 Tablespoon Tamari
- 1 clove garlic, pressed in a garlic press
- 2 Tablespoons minced onion
- 1/4 teaspoon coarsely ground pepper
- Wash, spin and tear lettuces into bite sized pieces. In a separate bowl, mix fruit, nuts, onion. Add gorgonzola. Combine dressing ingredients, shake well and refrigerate until needed. When ready to serve, combine salad ingredients and toss gently to combine. Pass dressing for individual use.
