Greek Chicken And Rice
- 1/2 stick butter
- 4 chicken breasts
- 1 tsp. all-purpose Greek seasoning
- 1 bell pepper, chopped
- 1 stalk celery
- 1/2 c. onion, chopped
- 2 garlic cloves, finely minced
- 2 c. uncooked long grain rice
- 1 can cream of chicken soup
- 2 cans water or chicken broth
- 1/2 c. canned tomatoes with green chiles (Ro-Tel)
- 1 tsp. salt
- dash of pepper
- Melt butter in large pan. Add chicken breasts mixed with Greek seasoning. Brown chicken breasts and simmer until hot. Place chicken in a 9 x 13-inch baking dish and set aside. Using the same pan, saute bell pepper, celery, onion and garlic until tender, about 2 minutes. To this mixture, add rice and remaining ingredients. Mix together and pour evenly over chicken. Bake, covered, in a preheated oven at 400u0b0 for 45 minutes. Garnish and serve. Serves 4.
