Chocolate Bread Pudding
- 1 tbsp butter (plus more for baking dish)
- 8 slices cinnamon-raisin bread
- 2 cups milk
- 3 oz semi-sweet chocolate
- 2 large eggs
- 1/2 c granulated sugar
- 1/2 tsp vanilla extract
- 1 tbsp confectioners sugar
- Preheat oven to 350. Lightly butter an 11x7 inch baking dish. Toast bread until lightly crisped.
- In a medium saucepan, combine milk, chocolate and butter. Place over medium-low heat, stirring occassionally, until chocolate has melted, about 5 mins.
- Tear bread into large pieces (4-5 per slice); scatter evenly in prepared dish. In a medium bowl, whisk together eggs, granulated sugar, and vanilla. Whisk in warm milk mixture until combined. Pour over bread.
- Bake until pudding has puffed and is firm, about 25 mins. Cool at least 10 mins and dust with confectioners sugar just before serving.
- Optional: Serve with cool whip or cream, as you would with a souffle. To jazz this recipe up, add a shot of Cointreau or Amaretto to the chocolate mixture.
