Hominy Casserole
- 3 Tbsp. butter
- 1 small onion, minced
- 3 Tbsp. flour
- 1/2 c. chopped green pepper (optional)
- 1 tsp. salt
- 1/2 tsp. dry mustard (optional)
- dash of pepper
- 1 1/2 c. milk
- 1 c. grated Cheddar cheese
- 1/2 c. chopped ripe olives
- 1 lb. 13 oz. can hominy, drained
- 1/2 c. buttered bread crumbs
- 1 lb. sausage, cooked
- Preheat oven to 375u0b0.
- Grease a 1 1/2-quart casserole dish. In saucepan, melt butter, add onion and bell pepper and saute 5 minutes.
- Blend in flour and seasonings; add milk and cook and stir until mixture thickens and comes to a boil.
- Add cheese and stir until melted.
- Remove from heat.
- Stir in olives, hominy and sausage.
- Pour into prepared dish.
- Sprinkle with bread crumbs. Bake 30 minutes or until well browned.
- Serves 6 to 8.
