Athenian Rice
- One 6 oz. package Rice Pilaf (we like Farmhouse)
- 1 clove garlic, minced
- 1 teaspoon grated lemon rind
- 1 Tablespoon olive or vegetable oil
- 2 cups water
- 1 teaspoon oregano
- 1 cup sliced scallions
- 1/4 cup frozen spinach, thawed and squeezed dry
- 1 cup chopped fresh tomato
- 1/4 lb. finely crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/2 cup black olives, halved
- 1 Tablespoon lemon juice
- 2 teaspoons chopped fresh dill
- In a large saucepan, saute garlic and lemon rind in oil.
- Add water and oregano; bring to a boil.
- Add rice and contents of seasoning packet; return to a boil and add scallions.
- Reduce heat to low; cover and cook 20 minutes.
- Gently combine cooked rice mixture with spinach, tomatoes, cheese, parsley, olives, lemon juice, and dill.
