Athenian Rice

  1. In a large saucepan, saute garlic and lemon rind in oil.
  2. Add water and oregano; bring to a boil.
  3. Add rice and contents of seasoning packet; return to a boil and add scallions.
  4. Reduce heat to low; cover and cook 20 minutes.
  5. Gently combine cooked rice mixture with spinach, tomatoes, cheese, parsley, olives, lemon juice, and dill.
