Orange Grove Muffins
- 2 c. cake flour or 1 3/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/4 c. sugar
- 2 tsp. baking powder
- 2 eggs
- 1/3 c. orange juice (fresh or frozen)
- 1/3 c. milk
- 2 Tbsp. butter, melted
- 2 tsp. grated orange rind
- 1/2 c. finely chopped pecans
- 1 Tbsp. orange rind, grated for garnish
- 2 Tbsp. pecans, chopped for garnish
- In a bowl, sift together flour, salt, sugar and baking powder. In separate bowl, beat eggs with fork.
- Blend in milk, orange juice and melted butter.
- Add orange rind and pecans.
- Stir liquid mixture into dry ingredients with few strokes.
- Mixture will be lumpy.
- Do not overbeat.
- Spoon batter into well-greased muffin cups.
- Mix 1 tablespoon orange rind and 2 tablespoons pecans. Sprinkle a little on top each muffin if desired.
- Bake at 400u0b0 for 20 minutes.
- Yield: 1 1/2 dozen.
