Eats Like A Meal Baked Beans
- about 32 oz dry beans, mix of your choice
- 1/2 to 1 lb maple-wood smoked bacon, diced
- 2 or 3 large onions, diced
- 1/4 cup minced Garlic, divided
- 2 bay leaves, optional
- 1 can condensed tomato soup
- 1 tbsp dry mustard powder, or to taste
- 1/8 cup molasses (I use sorgum), or to taste
- 3/4 cup brown sugar, or to taste
- 1 tsp Worcestershire sauce, or to taste
- 1/2 tsp horseradish (OPTIONAL, but adds a depth of flavor that isn't overwhelming in this very large batch, and you cant even spot the flavor distinctly.
- salt and pepper, to taste
- Make up your own mix of beans and soak for several hours or overnight. Drain soaking water and top beans with approximately twice the water as the soaked beans, less if you soaked overnight.
- In a large stock pot (I use a 6 qt roaster oven, which is like a crock pot with temperature gauge that goes to 400 degrees F) saute bacon, onions, bay leaves, and half of garlic until bacon is done, but not crisp. Add bean and water mixture and cook on a steady simmer until beans are nearing cooked. Remove bay leaves. In a mixing bowl add remaining ingredients and the remaining 1/8 cup of garlic and mix well. It will smell strong (almost like cocktail sauce), but this is nothing like the sweet and savory, and yes mild, flavor the beans will turn out once it is cooked. Add the flavoring mixture to the beans and continue to simmer until beans are tender and flavors have settled. You may need to add more water during the cooking process to keep beans from sticking, but be careful towards the end of the cook time so you don't accidentally make bean soup. Enjoy!
