Raspberry Chicken
- Chicken breasts (atleast four)
- 1/2 C. Raspberry Jam
- 1/2 C. Pineapple Juice
- 1/2 C. Soy Sauce
- 2 T. Rice Wine Vinegar
- 1/2 Tsp. Chili Powder
- 1/2 Tsp. Curry Powder
- 1/2 Tsp. Garlic Powder
- 1/2 C. Raspberries (frozen)
- Salt and Pepper to taste
- Combine all wet ingredients into the crock-pot or pan. Next, mix the spices in with the liquids and stir. Place chicken breast and rasberries in with the liquid. Cover and cook. When complete the liquid will remain runny. If you want a thicker sauce see added steps.
- Additional steps:
- Take a tablespoon of corn starch and add to two tablespoons of cold water. Stir until dissolved. Pour the hot liquid from the crock-pot into a pot on the stove and bring to a broil. Slowly pour the dissolved corn starch into the boiling liquid. Stir constantly until you reach your desired thickness.
